  • 1 small onion, chopped
  • 2 bell peppers (red and/or green) chopped fine

  • 3 1/2 cups leftover mashed potatoes
  • 1/2 cup Garlic Feta cheese
  • 2 grape-vine tomatoes, sliced
  • 1 Tablespoon Dill seasoning
  • ½ Tablespoon Saffron seasoning
  • 1 teaspoon salt
  • 1 teaspoon fresh cracked pepper
  • 4 tortillas (maybe a couple of more)

Instructions

First preheat the oven to 350 degrees.

While the oven is heating up, grab a medium non-stick skillet and add the tablespoon oil. Then bring in the peppers and onions and stir for 8-10 minutes or until all the veggies have become tender. Cook over low heat on the stove.

Use a mixing bowl to whisk the eggs and add those leftover mashed potatoes, along with the feta cheese, dill seasoning, saffron, salt and pepper and whisk them up until they are thoroughly combined. Stir in the vegetable mixture that you have just heated in the skillet.

Now pour the whole mixture in a lightly coated 9×12 baking dish and bake for around 15 to 20 minutes or until an inserted toothpick comes out clean.

To further enhance the Hispanic touch serve a toasted tortilla with each two-egg serving. You can have the tortilla either on the side or holding the omelet itself. Some often like to roll the omelet into the tortilla as a kind of breakfast burrito, so be prepared to toast an extra one.
