We have here a recipe that you surely want to try. These potato rolls are unlike the usual that are added with yeast and with lengthy rising time of the dough. These rolls are made easy in approximately 25 minutes, without yeast, kneading the mixture in a few minutes will do. The ingredients are very handy, you probably already have them. Left over mashed potatoes may be used to make these delicious rolls. Truly, this is such a hassle-free recipe that would result into a lovely side dish or dessert. Simply follow these few quick steps.
Ingredients
  • 1½ cups all-purpose flour (165 g)
  • 1½ tablespoon baking powder (15 g)
  • 1 teaspoon baking soda (5 g)
  • 4 tablespoons butter, plus extra for greasing (60 g)
  • 3 tablespoons sugar (45 g)
  • 1⅓ cups freshly boiled and mashed potatoes (300 g)
  • 3 tablespoons milk (45 ml)
Instructions
  1. Preheat oven to 425 degrees Fahrenheit.
  2. Meanwhile, sift together flour, baking powder and baking soda in a bowl.
  3. Stir in butter until the mixture resembles fine bread crumbs. Add sugar and mashed potatoes.
  4. Add enough milk to form a soft but nonstick dough. Turn out the dough onto a floured surface and knead lightly until well blended.
  5. Roll out until ½-inch thick and cut into rectangles. Place the rectangles on a buttered baking sheet.
  6. Bake in the preheated oven for 12-15 minutes, until risen and golden. Leave to cool on a wire rack.
  7. Serve and enjoy.
Notes
You can also make these rolls into triangles instead of rectangles, cutting the dough into triangles. Serve these with Fried chicken and milk gravy.
