Chocolate-covered potato chips are popular American snacks or sweet food. These are candy-like potato chips that have been dipped into melted chocolate or cocoa, and coated with the chocolate. Usually, commercially prepared potato chips are used in other recipes, but for this recipe, we used fresh potatoes and turned them into crispy chips, then coated them with melted chocolate. These are much healthier compared to commercially prepared potato chips, has lesser salt and fat content. Serve these as snacks during holidays or pack them as a lovely gift to someone.
Ingredients
  • 2 cups clarified butter (450 ml)
  • 1 1/2 cups canola oil (360 ml)
  • 4 russet potatoes or 2 Yukon gold potatoes
  • Kosher salt
  • 2 cups semi-sweet chocolate chips (350g)
  • 2 tablespoons vegetable shortening (30 ml)
Instructions
  1. In a deep saucepan, heat clarified butter and oil to 300° F.
  2. Peel potatoes and cut them into paper thin slices.
  3. Deep -fry potatoes in batches for 4-5 minutes or until oil around chips is no longer bubbling or until they are crispy. (Moisture in potatoes causes the oil to bubble; once the bubbles stop, the chips will be crispy)
  4. Drain on paper towels and sprinkle with kosher salt.
  5. In a small mixing bowl, mix chocolate chips and shortening.
  6. Heat chocolate mixture in a microwave oven on high heat for about 1 1/2 to 2 minutes or until melted and smooth when stirred.
  7. Dip potato chips, one at a time, into melted chocolate, coating one half to three quarters of each potato chip.
  8. Remove excess chocolate by pulling each chip at the edge of the mixing bowl.
  9. Place chips on a baking pan lined with wax paper.
  10. Allow chips to stand at room temperature for about 15 minutes, and then refrigerate to chill.
  11. Serve and enjoy!
Notes And Extra Tips

You can use butter instead of shortening in making the chocolate dip. When making them for holidays, you can also sprinkle potato chips with colored sugar after coating them with chocolate to make them more attractive.
