- 1 cup mashed potatoes (175 g)
- 2 cups all-purpose flour (220 g)
- 1 teaspoon baking soda (5 g)
- 1 tablespoon baking powder (15 g)
- 8 tablespoons butter (118.32 ml) or 8 tablespoons margarine, softened (118.32 ml)
- 4 ounces unsweetened chocolate squares, melted (113.39 g)
- 2 cups sugar (473.18 g)
- 4 eggs
- 3/4 cup buttermilk (177.44 ml)
- 1 teaspoon vanilla (5 ml)
- 1 teaspoon salt (5 ml)
- Combine all ingredients in a large mixing bowl, except the chocolate. Mix with an electric mixer on a low speed until well blended; occasionally scrape the bowl with a spatula. Whip mixture at medium speed for 4 minutes. Stir in chocolates and blend thoroughly.
- Grease a 9×13-inch baking pan using butter. Pour mixture into the pan.
- Bake cake mixture in a preheated 350 oven for 45 minutes, or until a toothpick inserted into the center comes out clean.
- Or bake in three 9-inch layer pans for 20 minutes, or until toothpick comes out clean.
- Allow cooling for 10 minutes; Remove from pans and let it cool completely on a wire rack.
