- 1/2 cup mashed potatoes (115 g)
- 1/2 teaspoon vanilla (2.5 ml)
- 1 lb sifted confectioners’ sugar (455 g)
- 2 tablespoons ground cinnamon (30 g)
- In a mixing bowl, mix mashed potatoes and vanilla.
- Adding one cup at a time, stir in enough confectioners’ sugar to form stiff, non-sticky dough. (The amount of sugar needed will depend on moisture of potatoes. Baked potatoes tend to be drier than boiled; leftovers tend to be drier than fresh.)
- With about 1 teaspoon of mixture for each candy, shape them into small irregular balls (like new potatoes) and lay down on wax paper to remove moisture before coating.
- In a plastic bag with ground cinnamon, toss candies a few at a time. Shake off excess cinnamon.
- Store candies in refrigerator to chill.
- Serve potato candies and enjoy!
