Ingredients
  • ½ cup mashed potatoes (115 g)
  • ½ teaspoon vanilla (2.5 ml)
  • 1 lb sifted confectioners' sugar (455 g)
  • 2 tablespoons ground cinnamon (30 g)
Instructions
  1. In a mixing bowl, mix mashed potatoes and vanilla.
  2. Adding one cup at a time, stir in enough confectioners' sugar to form stiff, non-sticky dough. (The amount of sugar needed will depend on moisture of potatoes. Baked potatoes tend to be drier than boiled; leftovers tend to be drier than fresh.)
  3. With about 1 teaspoon of mixture for each candy, shape them into small irregular balls (like new potatoes) and lay down on wax paper to remove moisture before coating.
  4. In a plastic bag with ground cinnamon, toss candies a few at a time. Shake off excess cinnamon.
  5. Store candies in refrigerator to chill.
  6. Serve potato candies and enjoy!
