- 1 small baking potato
- 1 -2 teaspoon milk or 1 -2 teaspoon cream (5-10 ml)
- 1 -2 lb confectioners’ sugar (455-910 g)
- 1/2 teaspoon almond extract (5-10 ml)
- 2 cups miniature dark chocolate chips (350 g)
- Wash, peel and boil potato until tender.
- Remove from heat and drain water, mash with fork and stir in milk.
- Use beaters on high speed to make mixture as fluffy and lump-free as possible.
- Mix almond flavoring, continue beating.
- Add confectioner’s sugar, a little at a time until mixture is thickened. Sugar and potato have a chemical reaction that makes the potatoes look like they are melting.
- Continue adding sugar until mixture forms stiff dough.
- Drizzle chocolate chips and knead (add chocolate chips as many as the dough will hold, or enough to suit your taste.)
- Shape into small balls, walnut-sized or smaller.
- Put them in mini cup cake papers to dry and finish hardening.
- Serve immediately or store in refrigerator for few minutes to chill before serving.
You can use mint extract as an alternative to almond extracts, it gives the candies a minty flavor.
