Easy Potato Candy Bonbons Recipe

This is an old recipe that a lot of people are searching for especially during special holidays. These are mini cake-like candies that are very yummy and fulfilling. These are coated with chocolate and rich in potatoes. Prepare these desserts for weddings, Thanksgiving and even during Christmas holidays.
Ingredients
  • 1 small baking potato
  • 1 -2 teaspoon milk or 1 -2 teaspoon cream (5-10 ml)
  • 1 -2 lb confectioners' sugar (455-910 g)
  • ½ teaspoon almond extract (5-10 ml)
  • 2 cups miniature dark chocolate chips (350 g)
Instructions
  1. Wash, peel and boil potato until tender.
  2. Remove from heat and drain water, mash with fork and stir in milk.
  3. Use beaters on high speed to make mixture as fluffy and lump-free as possible.
  4. Mix almond flavoring, continue beating.
  5. Add confectioner's sugar, a little at a time until mixture is thickened. Sugar and potato have a chemical reaction that makes the potatoes look like they are melting.
  6. Continue adding sugar until mixture forms stiff dough.
  7. Drizzle chocolate chips and knead (add chocolate chips as many as the dough will hold, or enough to suit your taste.)
  8. Shape into small balls, walnut-sized or smaller.
  9. Put them in mini cup cake papers to dry and finish hardening.
  10. Serve immediately or store in refrigerator for few minutes to chill before serving.
Notes
You can use mint extract as an alternative to almond extracts, it gives the candies a minty flavor.
