Biscuit Potato Rolls Recipe
- 1½ cups all-purpose flour (165 g)
- 1½ tablespoon baking powder (15 g)
- 1 teaspoon baking soda (5 g)
- 4 tablespoons butter, plus extra for greasing (60 g)
- 3 tablespoons sugar (45 g)
- 1⅓ cups freshly boiled and mashed potatoes (300 g)
- 3 tablespoons milk (45 ml)
- Preheat oven to 425 degrees Fahrenheit.
- Meanwhile, sift together flour, baking powder and baking soda in a bowl.
- Stir in butter until the mixture resembles fine bread crumbs. Add sugar and mashed potatoes.
- Add enough milk to form a soft but nonstick dough. Turn out the dough onto a floured surface and knead lightly until well blended.
- Roll out until ½-inch thick and cut into rectangles. Place the rectangles on a buttered baking sheet.
- Bake in the preheated oven for 12-15 minutes, until risen and golden. Leave to cool on a wire rack.
- Serve and enjoy.
You can also make these rolls into triangles instead of rectangles, cutting the dough into triangles. Serve these with Fried chicken and milk gravy.
