Leftover Mashed Potato Soufflé
- 3 eggs, separated
- ⅔ cup Monterey jack cheese, shredded (67 g)
- Salt and pepper
- ¼ teaspoon nutmeg (1.25 g)
- 2 cups mashed potatoes, leftover (450 g)
- Preheat oven to 300 degrees Fahrenheit.
- Beat the egg whites thoroughly in a bowl until bubbles are formed.
- Meanwhile, add the egg yolks, cheese, salt, pepper, and nutmeg into the bowl of mashed potatoes.
- Stir in beaten egg whites into the potato mixture.
- Bake in a soufflé dish for 20 minutes or until lightly browned on top.
For some variations, add crisp bacon bits, fresh herbs, or shredded pork or chicken.
