Would you believe potato chips have been with us for more than 150 years? According to history, way back in 1853, a Native American chef named as George Crum accidentally spurred the invention of potato chips when a customer repeatedly complained that his fried potatoes were not crisp enough and too thick. The customer’s agitation inspired Crum to improvise – basically slicing the potatoes thinly and stir-frying them. The customer loved the new crispy, browned, paper-thin potatoes and that was how potato chips were made-up. That first ever potato chips were called Saratoga chips since the historical incident happened in an elegant resort in Saratoga, New York. Now that you’re aware of its history, you surely can’t wait to try this potato chip recipe that has a healthy twist- no frying but just baking!
Serves: 8
Ingredients
  • 2 pounds of peeled potato, thinly sliced (about 2 large russets)
  • Vegetable cooking spray
  • ½ teaspoon salt (2.5 g)
  • ⅓ cup of fine crumbled blue cheese or substitute Gorgonzola (35 g)
  • ⅓ cup fat-free sour cream (80 ml)
  • 2 tablespoons of light mayonnaise (30 ml)
  • 2 tablespoons of nonfat milk (30 ml)
  • ¼ teaspoon Worcestershire sauce (1.25 ml)
Instructions
  1. Preheat oven to 400 degrees F.
  2. Coat 2 baking sheets with the vegetable cooking spray and place baking sheets in the oven.
  3. Lay potato slices on paper towels and pat dry to remove excess moisture.
  4. Arrange half of the potato slices in a single layer on preheated baking sheets coated with cooking spray.
  5. Season with ¼ teaspoon salt or until desired saltiness is met.
  6. Bake at 400 degrees F for 10 minutes. Turn potato slices to the other side and bake for an additional 5 minutes or until golden.
  7. Repeat procedures 4, 5 and 6 with remaining potatoes and remaining teaspoon of salt or spices.
  8. Set aside baked potato chips.
  9. In a mixing bowl, prepare the creamy non-fat dip by combining crumbled blue cheese, sour cream, mayonnaise, non fat milk and Worcestershire sauce
  10. Stir well, cover and chill.
  11. Serve creamy non-fat dip with the potato chips and enjoy its healthy treat!
