Potato Chip Cookie Recipe
- cup crushed homemade potato chips (113 g)
- 1½ cups flour (75 g)
- ½ cup finely ground pecans (65 g)
- ½ cup sugar (115 g)
- ½ cup margarine, softened (115 g)
- 1 large egg yolk
- 1 teaspoon vanilla (5 ml)
- 1 cup confectioners' sugar (125 g)
- In a mixing bowl, mix chips, pecans and flour.
- In another mixing bowl, combine cream margarine and sugar.
- Stir in egg yolk and vanilla and beat well.
- Add dry ingredients and continue beating until thoroughly mixed.
- With damp hands, roll dough into small balls with 1 inch thickness and place on ungreased cookie sheets.
- Bake dough for 15-18 minutes at 350°F or until cookies begin to become golden brown.
- Cool slightly and roll them in sugar.
- Serve potato chip cookies and enjoy!
