Irish Potato Cake Recipe from Scratch

Frying potato cakes is customary in Ireland. In a matter of 40 minutes and with a little mixing and frying, you could easily make this savory Irish potato cake! Ingredients
  • 1 lb potatoes (about 3 or 4) (1000 g)
  • 2 tablespoons unsalted butter (30 g)
  • 1 teaspoon salt (5 g)
  • 2 cups all-purpose flour (220 g)
Instructions
  1. First, wash and peel potatoes. In a pot, boil them until tender.
  2. Drain potatoes, return to pot and mash. Drizzle potatoes with salt and butter. Mix well and let it cool to room temperature.
  3. On a well-floured surface, place potato mixture, add 1 cup of flour and knead lightly but thoroughly. Mix enough amount of flour just until the dough is smooth and able to be rolled out and keep its shape.
  4. Shape into a rectangle with ½ inch thickness. Slice into three or four rows, and then cut each row into equilateral triangles, about 2 inches on each side. This is the traditional shape, but you could also use a biscuit cutter.
  5. Place in a skillet over low heat and cook on each side until golden browned.
  6. Serve hot with butter, or freeze for later use. Enjoy!
Notes
For a healthy and textured variation, use fine oatmeal instead of flour.
