Irish Potato Cake Recipe from Scratch

- 1 lb potatoes (about 3 or 4) (1000 g)
- 2 tablespoons unsalted butter (30 g)
- 1 teaspoon salt (5 g)
- 2 cups all-purpose flour (220 g)
- First, wash and peel potatoes. In a pot, boil them until tender.
- Drain potatoes, return to pot and mash. Drizzle potatoes with salt and butter. Mix well and let it cool to room temperature.
- On a well-floured surface, place potato mixture, add 1 cup of flour and knead lightly but thoroughly. Mix enough amount of flour just until the dough is smooth and able to be rolled out and keep its shape.
- Shape into a rectangle with 1/2 inch thickness. Slice into three or four rows, and then cut each row into equilateral triangles, about 2 inches on each side. This is the traditional shape, but you could also use a biscuit cutter.
- Place in a skillet over low heat and cook on each side until golden browned.
- Serve hot with butter, or freeze for later use. Enjoy!
For a healthy and textured variation, use fine oatmeal instead of flour.
