This mashed potato dumpling recipe is a combination of the classic mashed potato taste paired with the savory taste of whatever meat you decide to put inside the dumpling. You could also make a vegetarian version of this dumpling and leave out the meat. Whatever combination you decide to make you will not be disappointed. Mashed potatoes are loaded with starch so they combine well with the heavy flavors of a dumpling. Dumplings are a favorite among southern cooks because they can be viewed as a casserole where you can use all of your left overs to put into the dish and make a fabulous recipe while cleaning out your refrigerator from all of the left overs. The dumplings are fairly labor intensive to make from scratch but they are well worth the effort.

Potato Dumplings Ingredients

To make a family sized recipe you will need:

  • 4 large potatoes that are mashed.
  • You will also need 4 cups of all purpose flour.
  • You will need 1/2 cup of water.
  • 4 tablespoons of butter.
  • 1/2 cup of milk.
  • 1 pound of the meat of your choice (we will use boneless, skinless chicken in this recipe).
  • 1 teaspoon of salt.
  • 1 teaspoon of pepper.
  • 1 tablespoon of rosemary.
  • 1 cup of chicken stock.

Instructions

To begin you will need to make the dough for your dumplings. First take your 4 large mashed potatoes and mix them in a large stand mixer with the 4 cups of flour. Add the 1/2 cup of water and mix until combined. Then take the mixture out of the mixer and knead into a dough ball. Tear off 1/4 of the dough ball and roll flat (approximately 1/8 inches thick) with a rolling pin. Next, take a knife and cut the dough into 2 inch by 3 inch rectangles and lay them flat next to each other. Continue to roll out remaining dough until all dough has been cut into small rectangles.

Next salt a large pot of boiling water. While bringing to a boil, combine 1 pound of cooked boneless skinless chicken breast, chicken stock, rosemary, butter, salt, pepper, and milk to the pot. Bring this mixture to a simmer and take off heat. let stand until thick (add a tablespoon of flour if necessary to thicken). Ladle small amount of chicken mixture into center of 2 inch x 3 inch rectangle and press sides together with fingers. Place dumplings in boiling water and let boil until the dumplings rise to the surface.

Serve hot.
