Mashed Potato Soup Recipe

This potato soup recipe is extremely easy to make. It is so easy to make in fact that you can even use a blender or a food processor to do most of the work. Almost all of the ingredients are common items that most cooks already have in their kitchens and the culinary skills needed to make this soup are success are minimal. If you can flip a switch on a blender and stir a pot of potatoes then you can make this soup! This recipe is very unique because it allows you to take left over mashed potatoes and re purpose them into delicious potato soup. Throw in in a few special ingredients and you have a new favorite dish for your family. In fact, this dish is already a family favorite among many families in the south and it is growing increasingly popular as a comfort food item in colder northern states.

Potato Soup Ingredients

Obviously you will need to start out with potatoes. The beauty of this recipe is that you will start out by using the left over mashed potatoes that you served for a previous meal. You will need:

  • around 8 pounds of potatoes so if you do not have that much left over, you can peel and mash some additional potatoes.
  • 1 cup of shredded sharp cheddar cheese.
  • Seven cups of milk.
  • One tablespoon of minced garlic.
  • 1 handful of leeks.
  • 1 teaspoon of salt and black pepper.
  • 8 ounces of sour cream and
  • 4 tablespoons of butter.


First you should put your mashed potatoes into a blender or a large food processor. If they will not all fit in at once you can do this in batches. You want to whip your potatoes into a thick paste with no lumps. You can add milk as needed to thin your potatoes out. Once they are all thin place in a large pot over medium heat. Continue to stir in milk until very creamy. Stir in sour cream, salt, pepper, and garlic. Continue to let simmer for 15 minutes. Sprinkle 1 cup of shredded cheddar cheese into soup and stir until combined. Serve hot.

This soup is an excellent meal to serve on a cold rainy day and it is sure to be a hit with your family. This soup also freezes well so you can save a batch for later!
