This potato soup recipe is extremely easy to make. It is so easy to make in fact that you can even use a blender or a food processor to do most of the work. Potato Soup Ingredients

Obviously you will need to start out with potatoes. The beauty of this recipe is that you will start out by using the left over mashed potatoes that you served for a previous meal. You will need:

  • around 8 pounds of potatoes so if you do not have that much left over, you can peel and mash some additional potatoes.
  • 1 cup of shredded sharp cheddar cheese.
  • Seven cups of milk.
  • One tablespoon of minced garlic.
  • 1 handful of leeks.
  • 1 teaspoon of salt and black pepper.
  • 8 ounces of sour cream and
  • 4 tablespoons of butter.

Instructions

First you should put your mashed potatoes into a blender or a large food processor. If they will not all fit in at once you can do this in batches. You want to whip your potatoes into a thick paste with no lumps. You can add milk as needed to thin your potatoes out. Once they are all thin place in a large pot over medium heat. Continue to stir in milk until very creamy. Stir in sour cream, salt, pepper, and garlic. Continue to let simmer for 15 minutes. Sprinkle 1 cup of shredded cheddar cheese into soup and stir until combined. Serve hot.
