Old Fashioned Potato Candy Recipe

This recipe is an old fashioned potato candy recipe. You will be reminded of your Grandma’s Hershey-like potato candies that with just one bite, you’ll get addicted to. They are best when chilled mashed potatoes are used. You could also use those left over mashed potatoes, grab them and follow this recipe.
Ingredients
  • 1 lb semisweet chocolate, chopped (455 g)
  • 1 cup mashed potatoes (240 g)
  • ½ teaspoon salt (5 g)
  • 2 teaspoons vanilla extracts (10 ml)
  • 2 lbs confectioners sugar (910 g)
  • ⅔ cup flaked coconut (160 g)
Instructions
  1. First, make the chocolate dip. Melt chocolates by heating them in the top of a double boiler, stirring it occasionally, until melted and smooth.
  2. In a mixing bowl, mix potatoes together with salt, vanilla and coconut flakes. Drizzle confectioners sugar over potatoes, stir and add sugar gradually about 1 cup at a time. Mixture will liquefy when first sugar is added then progressively begin to thicken.
  3. When mixture becomes the consistency of stiff dough, knead it even if not all the sugar has been added.
  4. After kneading, cover it with a damp cloth and chill until a spoonful of dough can be rolled out into a ball.
  5. Remove from refrigerator and roll them into small ½ inch balls. Immerse balls in melted chocolate then roll in peanuts or coconut.
  6. Serve and Enjoy!
Notes
Salted peanuts can be an alternative to flaked coconuts. You could also top each candy with almond.
