This is an extraordinary recipe that combines mashed potatoes, savory spices and salmon into one delicious dish. The strong taste of salmon plus the starchy mash potatoes and a squeeze of sweet lemon zest complemented perfectly. Ingredients
  • 30 ounces canned red salmon (840 g)
  • 1½ cups cold mashed potatoes (340 g)
  • ¼ cup matzo meal (150 g)
  • 1 egg, slightly beaten
  • ½ yellow onion, finely grated, optional
  • ¼ teaspoon white pepper (1.25 g)
  • ¼-1/2 teaspoon salt (1.25-2.5 g)
  • ½ teaspoon fresh lemon zest (2.5 ml)
  • 2 tablespoons light vegetable oil (30 ml)
  • 2 tablespoons unsalted butter, divided (30 ml)
Instructions
  1. First, drain and remove skin from salmon, leave bones.
  2. Mix all ingredients together, except for the oil and butter, and then stir to combine well.
  3. Keep the mixture in refrigerator for at least 30 minutes.
  4. When the mixture is firm enough to handle, shape portions of mixture into flat patties, about the size of your palm and place them on a plate.
  5. In a large frying pan over medium-high heat, place 1 tablespoon of butter and oil to coat pan nicely, and then swirl butter around until melted.
  6. Fry four patties at a time until golden brown on both sides.
  7. Add the remaining butter and 1 tablespoon of oil, and repeat the frying step until all patties are cooked.
  8. Drain patties on paper towels.
  9. Serve these patties either hot or cold, and enjoy!
Notes
If you haven’t got a matzo meal, use crushed cracker crumbs or bread crumbs as an alternative. You can serve these salmon potato patties with creamed peas and French fries, or make these as a lovely filling for hamburgers together with mayo, lettuce and cheese.
