- 1 cup canned crushed pineapple, not drained (240 ml)
- 2 cups sweet potatoes, mashed (475 g)
- 1/2 teaspoon salt (2.5 g)
- 1/4 teaspoon cream of tartar (1.25 g)
- 2 cups brown sugar (400 g)
- 2/3 cup boiling water (160 ml)
- 1 cup almonds, shelled, chopped (160 g)
- In a mixing bowl, mix sweet potatoes together with pineapple, and salt.
- Place in a pot and cook over low heat, stirring constantly for 5 minutes.
- Dissolve cream of tartar and brown sugar in boiling water then stir into potato mixture.
- Cook over low heat until a drop of mixture forms a soft ball in cold water.
- Remove from heat and beat until smooth in consistency.
- Add up the almonds and mix well.
- Spoon potato mixture gradually onto a buttered surface until all mixture is used up.
- Refrigerate to chill.
