Ingredients
  • 1 ½ cup frozen hash brown potatoes, thawed (225 g)
  • 1 (6 ounce) can solid white tuna packed in water, drained and flaked (180 ml)
  • 1 egg, lightly beaten
  • ¼ teaspoon salt (1.25 g)
  • ⅛ teaspoon fresh ground pepper (0.63 g)
  • 3 teaspoons extra virgin olive oil, divided (15 ml)
Instructions
  1. Thoroughly mash potatoes in a bowl with a fork until they begin to thicken and hold together.
  2. Stir in tuna, egg, salt, pepper and I teaspoon of oil; Mix well to thoroughly combine.
  3. Shape into four ½-inch-thick patties.
  4. In a medium nonstick skillet, heat the remaining 2 teaspoons oil over medium-low heat.
  5. Fry the patties until browned on the first side, about 5 minutes.
  6. Carefully turn the patties with a wide spatula and cook until golden on the other side, for about 3 minutes more.
  7. Take out croquettes from skillet, serve and enjoy!
Notes
Mix a bit of chopped dill, capers or lemon zest, or canned salmon for a variation.
