This is another quick and easy recipe that you definitely love to try. It does not only end up into these savory golden croquettes but also into a nutritious seafood dish. You can make use of leftover mashed potatoes, best when they are chilled. The taste of tuna and the richness of mashed potatoes blended perfectly that makes you crave for more. Try this extremely easy recipe and be fulfilled by the results.
Ingredients
  • 1 ½ cup frozen hash brown potatoes, thawed (225 g)
  • 1 (6 ounce) can solid white tuna packed in water, drained and flaked (180 ml)
  • 1 egg, lightly beaten
  • 1/4 teaspoon salt (1.25 g)
  • 1/8 teaspoon fresh ground pepper (0.63 g)
  • 3 teaspoons extra virgin olive oil, divided (15 ml)
Instructions
  1. Thoroughly mash potatoes in a bowl with a fork until they begin to thicken and hold together.
  2. Stir in tuna, egg, salt, pepper and I teaspoon of oil; Mix well to thoroughly combine.
  3. Shape into four 1/2-inch-thick patties.
  4. In a medium nonstick skillet, heat the remaining 2 teaspoons oil over medium-low heat.
  5. Fry the patties until browned on the first side, about 5 minutes.
  6. Carefully turn the patties with a wide spatula and cook until golden on the other side, for about 3 minutes more.
  7. Take out croquettes from skillet, serve and enjoy!
Notes And Extra Tips

Mix a bit of chopped dill, capers or lemon zest, or canned salmon for a variation.
