This simple recipe uses white potatoes to make a wonderful dessert. Lemon zest, lemon juice and vanilla made this potato pie extraordinarily sweet-smelling. The pie filling contains mashed potatoes, heavy cream, butter and milk which made it completely delicious and creamy. The sweetness of this pie is like Hershey’s mounds candy bar. Ingredients
  • 2 white potatoes peeled boiled and mashed
  • ⅔ cup butter (160 ml)
  • 1 cup white granulated sugar (225 g)
  • ½ teaspoon baking powder (2.5 g)
  • ⅛ teaspoon salt (0.63 g)
  • ½ cup heavy whipping cream (116 g)
  • ½ cup milk (120 ml)
  • 2 teaspoons lemon zest (10 ml)
  • 2 tablespoons lemon juice (30 ml)
  • 1 teaspoon vanilla extracts (5 ml)
  • 4 eggs beaten
  • 2 pie shells
Instructions
  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a medium bowl, combine sugar, baking powder and salt. Add potatoes and butter. Mix well.
  3. Gradually add whipping cream and milk, stirring constantly until well blended.
  4. Stir in lemon zest, lemon juice, vanilla and nutmeg. Add beaten eggs and mix well.
  5. Pour mixture evenly into pie shells, pressing the mixture into the bottom and making sure all edges are filled.
  6. Place in preheated oven and bake for 1 hour.
  7. Let it cool for a few minutes, serve and enjoy!
