This recipe for mashed potato yeast bread takes one of America’s favorite dishes, mashed potatoes, and turns it into a wonderful loaf of bread that can be enjoyed for days. The recipe is probably suited more to intermediate or advanced-level chefs, and is different from other types of bread recipes, even regular potato bread, because it includes underlying hints of sweetness from lemon and nutmeg. This recipe for mashed potato yeast bread is baked in the oven, but can also be made using a bread machine.

Mashed Potato Yeast Bread Ingredients

  • 1/2 cup leftover mashed potatoes
  • 3/4 cup water
  • 1 tablespoon milk
  • 4 tablespoons butter
  • 5 cups all-purpose white flour
  • 3/4 cup sugar
  • 1 .25 ounce package of active dry yeast
  • 1 1/2 teaspoons salt
  • 1 teaspoon lemon peel, grated
  • 1/2 teaspoon ground nutmeg
  • 3 whole eggs, lightly beaten

Instructions

1) In a large mixing bowl, combine three cups of the flour, along with the sugar, yeast, salt, nutmeg and grated lemon peel.

2) Melt four tablespoons of butter in a small bowl, and allow the butter to cool to 120 to 130 degrees Fahrenheit.

3) Add water and cooled butter into the flower mixture, and beat until the mixture is just moistened.

4) Add lightly beaten eggs and mashed potatoes, and beat until smooth.

5) Using a spoon, add small amounts of the remaining flour and mix until a firm dough is formed. All of the remaining flour may not be used.

6) Turn the ball of dough out of the bowl and onto a floured surface. Knead the dough until it is smooth and elastic. This will probably take six to 10 minutes. After kneading the dough, place it into a greased bowl and turn it once to make sure all sides are greased. Cover the bowl and set it in a warm place for about an hour, or until the dough has doubled in size.

7) After the dough has risen, punch it down and turn it back out onto a lightly floured surface. Shape the dough into two loaves. Place the formed loaves into two greased 8X4X2 loaf pans. Cover the pans and allow the dough to sit in a warm place for another hour, or until doubled.

8) Bake the bread at 325 degrees for 45-50 minutes, or until the outside is golden brown. Remove bread from pans and place on wire racks to cool.
