A leftover mash recipe that comes from England, we had as kids the following morning after the family roast with a fried breakfast.

Instructions

  1. Take the leftover mash and combine with the leftover veg from the night before.
  2. Pan fry in the bacon fat.
  3. Serve with bacon, sausage, eggs, all your favorite breakfast food.

Easy recipe that would result into these light buttery rolls. This is another way to get rid of left over mashed potato and turn it into something new and delicious. The dough takes a while to rise, but refrigerating them for a few days would make it rise perfectly. Another thing, you don’t need to knead the dough for a long time because the mixture is easy to deal with, simply leave the dough in your fridge and it will rise perfectly. The rising time of the dough isn’t included in the stated preparation time. Simply follow the steps outlined below and serve these mashed potato rolls as a lovely side dish for dinner.
Ingredients
  • 1 package dry yeast (1/4 ounce or 7 g)
  • ½ cup lukewarm water (120 ml)
  • 1 cup mashed potatoes (225 g)
  • ¼ cup sugar (115 g)
  • 2 eggs
  • 1 teaspoon salt (5 g)
  • ⅔ cup salad oil (160 ml)
  • 1 cup milk, scalded (240 ml)
  • 5-6 cups flour (550 g- 660 g)
Instructions
  1. Soak the yeast in lukewarm water.
  2. Meanwhile, in large bowl, mix together potatoes, sugar, eggs, salad oil, and milk. Add yeast and flour to make a stiff dough.
  3. Place in a greased bowl and cover. Keep in refrigerator and use within 4 days.
  4. Punch down dough and knead slightly.
  5. Shape into little rolls and let rise for 1½ hours or until doubled in size.
  6. Bake for 8 minutes at 400 degrees Fahrenheit.
  7. Serve warm

These rolls are perfect with potato soup for dinner.

Instructions

  2. Meanwhile, sift together flour, baking powder and baking soda in a bowl.
  3. Stir in butter until the mixture resembles fine bread crumbs. Add sugar and mashed potatoes.
  4. Add enough milk to form a soft but nonstick dough. Turn out the dough onto a floured surface and knead lightly until well blended.
  5. Roll out until ½-inch thick and cut into rectangles. Place the rectangles on a buttered baking sheet.
  6. Bake in the preheated oven for 12-15 minutes, until risen and golden. Leave to cool on a wire rack.

Notes
You can also make these rolls into triangles instead of rectangles, cutting the dough into triangles. Serve these with Fried chicken and milk gravy.

  • 1 unbaked 9-inch pie shell
  • 2 cups cooked mashed potatoes (450 g)
  • ½ cup half-and-half (a mixture of one part milk and one part cream) (120 g)

  • ¾ cup cream-style cottage cheese (75 g)
  • ½ cup sour cream (120 ml)
  • 2 eggs
  • ½ teaspoon salt (2.5 g)
  • ¼ teaspoon garlic powder (1.25 g)

  • ⅛ teaspoon black pepper (0.63 g)
  • 1½ cups shredded cheddar cheese (150 g)

Instructions
  1. Line the unbaked, clean pastry shell with foil; fill with pie weights or dried beans.
  2. Bake at 450 degrees F for 5 minutes; remove weights and foil; bake for 5 to 7 minutes longer, until almost done, and then remove from oven.
  3. Reduce heat of oven to 425° F.
  4. In a mixing bowl, combine mashed potatoes, half-and-half and butter. Set aside.
  5. In another mixing bowl, combine cottage cheese, sour cream, eggs, salt, garlic powder, cayenne pepper and black pepper, and then beat with electric mixer on high speed until smooth.
  6. Combine this cheese mixture to potato mixture, and then beat for 1 minute more. Stir in shredded cheese, chopped onion and bacon.
  7. Pour potato-cheese mixture into warm pastry shell.
  8. Bake at 425° for 35 to 40 minutes or until golden brown.
  9. Remove pie from the oven, slice into pieces and serve!
Notes
This is served best as a dessert for baked ham and steamed broccoli.
