  • 1 canned creamy potato with roasted garlic soup (19 oz)
  • ½ cup heavy cream (120 g)
  • 1 teaspoon dried thyme (1 g)
  • 1 teaspoon freshly ground black pepper (2 g)
  • 6 large potatoes, peeled and sliced
  • 2½ cups shredded Cheddar cheese, divided (280 g)
Instructions
  1. Preheat the oven to 350° Fahrenheit or 175° Celsius
  2. In a blender, mix in the soup, cream, thyme, and pepper; process until smooth and even. Spread a thin layer of the mixture on the bottom of a 9x13 inch casserole dish.
  3. Layer potatoes with cheese ending with potatoes and reserving ½ cup cheese.
  4. Pour the soup mixture over the potatoes and sprinkle with the reserved cheese.
  5. Bake in the oven for 70 minutes.
  6. Remove from oven and let it cool for a couple of minutes.

Instructions
  1. Lightly grease mixing bowl and dough hook to prevent dough from sticking.
  2. In the greased mixing bowl, whisk together water, milk or half and half, sugar, salt, yeast, shortening and hot sauce.
  3. Stir thoroughly to dissolve salt and sugar.
  4. Combine grated potatoes and 1½ cup of the cheese and sufficient amount of flour to make a soft dough.
  5. In a lightly floured board, Knead dough by hand or use a cake mixer to knead dough for 8 minutes or until smooth.
  6. Cover with a tea towel and let it rest for 15 minutes.
  7. Divide the dough into 12-16 rolls, depending on your desired size. Shape each into ovals and place on a baking sheet.
  8. Brush with melted butter and sprinkle tops lightly with cornmeal.
  9. Place baking sheet in a large, drawstring plastic bag and let rolls rise for 30 minutes. Meanwhile, preheat oven to 400 degrees F.
  10. Make a shallow slice on top of each roll. Bake for 15 minutes, and then reduce heat to 375°F.
  11. Sprinkle remaining ½ cup of cheese on top of the rolls. Bake for 10 minutes more or until rolls are nicely browned and cheese is melted.

  4. Stir in green onion and sauté for another 5 minutes.

  7. Beat eggs together in a large bowl. Add salt, pepper, and hot sauce.
  8. Pour over potato mixture in the pan.
  9. Carefully lift edges of omelet using a spatula and tilt the pan so that the uncooked mixture flows underneath.
  10. Continue cooking until omelet begins to set and until bottom side is browned.
  11. Place a plate upside down over frying pan. Hold by its handle with one hand and the other hand flat on the plate. Carefully, flip the pan over into the plate.
  12. Add a small amount of oil into pan, if necessary. Slide the omelet back into the pan and cook the other side until bottom side is browned.
  13. Sprinkle and top with cheese.
  14. Set under broiler for 3-5 minutes or until cheese melts and omelet is set.
  15. Slice omelet into wedges.
