  • 5 cups all-purpose flour (550 g)
  • 1 cup mashed potatoes (225 g)
  • 3 tablespoons sugar (45 g)
  • 2 teaspoons salt (10 g)
  • 2 teaspoons active dry yeast (6.22 g)
  • 2 cups milk (480 ml)
  • ½ cup butter (115 g)
  • ½ cup green onion, sliced (75 g)
  • 2 eggs
Instructions
  1. Lightly scoop 1 ½ cups of flour into measuring cup and level off.
  2. In a large bowl, combine 1½ cup flour, potato flakes, sugar, salt and yeast. Mix well and set aside.
  3. In a medium saucepan, heat milk with butter and onions until very warm (120 to 130 F).
  4. Stir in warm milk/onion mixture into flour mixture. Add the eggs and beat at slow speed until moistened. Continue beating for 3 minutes more at medium speed.
  5. By hand, stir in 2 to 2½ cups of flour until dough pulls cleanly away from sides of bowl.
  6. On floured surface, Add 1 cup of flour gradually and knead until dough is smooth and elastic, for about 5 minutes.
  7. Place dough in a greased bowl. Cover loosely with plastic wrap and cloth towel.
  8. Let it rise in a warm place (80 to 85 degrees F) until light and doubled in size, for 30 to 45 minutes.
  9. Grease 13x9-inch pan or two 9-inches round cake pans.
  10. Punch down dough several times to remove all air bubbles. Divide dough into 24 equal pieces and shape into balls.
  11. Place in greased pan. Cover, let rolls rise in warm place until light and doubled in size, for about 15 to 30 minutes.
  12. Heat the oven to 375°F. Bake at 375 for 25 to 35 minutes or until golden brown.
  13. Immediately remove from pan and cool on wire rack.
  14. Serve and enjoy its onion flavor!

  • 1 sweet potato (224 g or 8 ounce)

  • ¾ cup warm milk (180 ml)

  7. Gradually mix 3 cups of the remaining flour, 1 cup at a time, to make a soft, sticky dough.
  8. Turn out dough onto lightly floured surface, knead until dough is smooth and sticky, adding enough of the remaining flour as needed. Kneading takes about 10 minutes.
  9. Place in a greased bowl and turn the dough to grease all over. Cover with a warm moist towel and let it rise in a warm, breeze-free place until it doubles in size, about 1 hour.
  10. Punch down dough; turn out onto a floured surface. Divide in half. Roll out each piece into ⅓ inch thick.
  11. Cut each half into individual 3 ½ inch rounds. Stretch each round into slight ovals; fold crosswise and pat edges gently to maintain shape. The rolls should resemble little half moons.
  12. Place one inch apart on greased cookie sheet. Cover again and let rise in a warm place for about 40 minutes.

  3. Mix together pounded cashew nuts, green chilies, ginger, green peas, coriander leaves and salt. Mix well. Divide into eight equal portions. Take each potato ball in your palm, make a hollow in it. Place a portion of the cashew nut mixture. Pull over the sides and edges to cover the filling. Roll it into an oblong roll. Similarly prepare the remaining rolls.
  4. Heat a sufficient ghee in a flat frying pan. Reduce heat and place four rolls on it. Shallow fry until rolls are evenly golden brown all around.

  4. Place into a floured surface; knead until smooth and elastic for about 7-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let it rise in a warm place until it doubles in size, takes about 1 hour.
  5. Press dough down. Turn onto a lightly floured surface; divide into 36 pieces. Roll each piece into a ball.
  6. Place in a greased 15-in. x 10-in. x 1-in. baking pan. Cover and let each roll rise until doubled, takes about 30 minutes.
  7. Bake at 375 degrees F for 20-25 minutes or until golden brown.
  8. Serve warm.
