Ingredients
  • ¾ cup sugar (170 g)
  • ¾ cup hot mashed potatoes (170 g)
  • 1½ cups water (110 to 115 degrees)
  • 2 (1/4 ounce) packages active dry yeast (7 g)
  • ½ cup butter or ½ cup margarine, softened (115 g)
  • 2 eggs
  • 2 teaspoons salt (10 g)
  • 6½ cups all-purpose flour (715 g)
  • FILLING: 1⅓ cups packed brown sugar (300 g)
  • ½ teaspoon ground cinnamon (2.5 g)
  • 3 tablespoons cream (45 g)
  • 4 tablespoons of flour (60 g)
  • 2 tablespoons butter or 2 tablespoons margarine, softened (30 g)
Instructions
  1. In a large mixing bowl, combine sugar and mashed potatoes. Add water and yeast, and then mix well.
  2. Cover and let it rise in a warm place for one hour.
  3. Meanwhile, combine all filling ingredients (brown sugar, ground cinnamon, cream, flour and butter/margarine). Set aside.
  4. Mix in butter, eggs and salt to the risen dough and gradually add the flour.
  5. Place onto a lightly floured surface; knead until smooth and elastic for 6-8 minutes.
  6. Divide dough into half. On a floured surface, roll each portion into a 12inch by 12 inch square pan.
  7. Divide filling, pour and spread evenly over each square.
  8. Roll up each in a jelly-roll style, and cut into small cylindrical rolls.
  9. Place in a greased 9 by 9inch baking pan. Cover and let the rolls rise in a warm place until doubled, about 1 hour.
  10. Bake at 350 degrees Fahrenheit for 35-40 minutes or until golden.
  11. Serve warm.
Notes
If desired, sprinkle potato rolls with confectioners’ sugar icing.

Now, here are the steps in making this sweet potato pie.
Ingredients
  • CRUST: 1¼ cups all-purpose flour (140 g)
  • ¼ teaspoon salt (1.25 g)
  • ½ cup shortening, chilled (113 g)
  • 3 tablespoons ice water (45 ml)
  • FILLING: 1 (15 ounce) can cut sweet potatoes, drained and mashed (420 g)
  • 2 tablespoons butter, softened (30 g)
  • ½ cup white sugar (115 g)
  • ½ cup brown sugar (115 g)
  • ½ cup evaporated milk (120 ml)
  • 2 eggs
  • 1 tablespoon flour (15 g)
  • ½ teaspoon ground nutmeg (2.5 g)
  • ½ teaspoon plus 2 dashes ground cinnamon (2.5 g)
  • 1 teaspoon vanilla extracts (5 ml)
Instructions
  1. First, make the pie crust; whisk the flour and salt together in a medium size bowl.
  2. Blend the cold shortening until the mixture resembles coarse crumbs. Pour 2 to 3 tablespoons ice water over flour.
  3. Toss mixture with a fork to moisten, adding more water gradually, a few drops at a time until the dough holds together.
  4. Carefully gather dough particles together into a ball, wrap in plastic wrap and chill for at least 30 minutes before rolling.
  5. Roll out dough, and line in an 8¼" x 1¼"inch foil pie plate.
  6. To prepare the pie filling, preheat oven to 350 degrees Fahrenheit.
  7. Place well drained sweet potatoes in medium sized mixing bowl. Stir in softened butter and mix well with mixer.
  8. Stir in sugars, evaporated milk, eggs, flour, nutmeg, cinnamon and vanilla. Beat on medium speed until mixture is smooth.
  9. Pour filling into the unbaked pie crust.
  10. Bake at 350 degrees for 60 minutes, or until knife inserted in center comes out clean. Let it cool for a few minutes before slicing.
  11. Slice into wedges, serve and enjoy!

  • 100 ml stock
  • 400 g short crust pastry, ready made

  1. First, heat the oven to gas mark 6.
  2. Cook the potato into a boiling salted water until tender, drain and mash. Set aside to cool.
  3. In a non stick pan, heat oil, add the ground pork and onion and sauté until browned.
  4. Add garlic spices and sprinkle plenty of pepper, a little salt, and continue cooking until browned.
  5. Remove from heat. Combine pork-spices mixture into mashed potato and set aside to cool.
  6. Roll our pasty and line base of a 20- 23cm pie tin. Fill pastry with pork mixture and brush edges of pastry to seal, trimming off excess.
  7. Prick the top of the pastry case to allow steam to escape and glaze top with the beaten egg.
  8. Bake for 30 minutes until crisp and golden.
  9. Slice into wedges, serve and enjoy!

It’s best served with a crisp green salad.
