This is one of the best potato chip recipes that you’ll definitely love. The recipe is quite plain but complete, it includes how to make the creamy onion dip. Ingredients
  • 5 lbs sweet potatoes or 5 lbs yams, peeled (2,275 g)
  • Peanut oil or vegetable oil
  • 2-3 tbsp. coarse salt (30-45 g)
  • Black pepper (optional)
  • 3 cups shredded mozzarella cheese (300 g)
  • 1 cup dairy sour cream (240 ml)
  • ½ cup mayonnaise or salad dressing (120 ml)
  • 2 tbsp. regular onion soup mix (30 g)
  • 2 tbsp. snipped parsley ( 30 g)
Instructions
  1. Use a mandoline to slice sweet potatoes into paper thin slices, and pat them dry with paper towels.
  2. In a deep fryer, heat 3 inches of oil to about 380 degrees F.
  3. Deep-fry the sweet potato slices in batches until they are golden brown.
  4. Remove chips from fryer and place on paper towels to drain fat.
  5. Prepare the creamy onion dip; thoroughly combine sour cream, mayonnaise, onion soup mix and parsley in a mixing bowl. Cover and chill until serving time.
  6. Transfer fried potato chips on a baking sheet and sprinkle with coarse salt and black pepper if desired.
  7. Set oven to broil heat.
  8. Drizzle shredded mozzarella cheese evenly on top of the fried potato chips.
  9. Broil for about 4 minutes or until the cheese melts.
  10. Place onto a serving dish.
  11. Serve delicious with the creamy onion dip and enjoy!
