- 5 lbs sweet potatoes or 5 lbs yams, peeled (2,275 g)
- Peanut oil or vegetable oil
- 2-3 tbsp. coarse salt (30-45 g)
- Black pepper (optional)
- 3 cups shredded mozzarella cheese (300 g)
- 1 cup dairy sour cream (240 ml)
- 1/2 cup mayonnaise or salad dressing (120 ml)
- 2 tbsp. regular onion soup mix (30 g)
- 2 tbsp. snipped parsley ( 30 g)
- Use a mandoline to slice sweet potatoes into paper thin slices, and pat them dry with paper towels.
- In a deep fryer, heat 3 inches of oil to about 380 degrees F.
- Deep-fry the sweet potato slices in batches until they are golden brown.
- Remove chips from fryer and place on paper towels to drain fat.
- Prepare the creamy onion dip; thoroughly combine sour cream, mayonnaise, onion soup mix and parsley in a mixing bowl. Cover and chill until serving time.
- Transfer fried potato chips on a baking sheet and sprinkle with coarse salt and black pepper if desired.
- Set oven to broil heat.
- Drizzle shredded mozzarella cheese evenly on top of the fried potato chips.
- Broil for about 4 minutes or until the cheese melts.
- Place onto a serving dish.
- Serve delicious with the creamy onion dip and enjoy!
