Ingredients
  • 1 medium russet potato
  • parchment paper
  • 2 teaspoons of salt (10 g)
  • optional seasonings: chili powder, Creole seasoning, Old Bay seasoning, etc.
  • cup Vinegar (120 ml)
Instructions
  1. Using a mandolin or v-slicer, cut one medium russet potato into paper-thin slices, making sure that all slices are the same thickness. (You can peel potato as desired.)
  2. Line the turntable tray of your microwave with parchment paper and arrange potato slices on it without overlapping. Salt lightly and sprinkle with your choice of seasonings.
  3. Microwave potato at full power until spots of brown begin to appear, takes about 4-6 minutes. Turn off the microwave for 1 minute.
  4. Microwave again at full power until the slices are golden brown. (Be very careful not to over-brown or they will taste burned.)
  5. Remove cooked potato chips from the microwave and allow to cool. Repeat procedures until all potato slices are cooked.
  6. Serve and enjoy!
Notes
Dip potato slices into cider vinegar before placing on the parchment paper.

  1. First, preheat the oven to 200°F with two racks.

According to history, way back in 1853, a Native American chef named as George Crum accidentally spurred the invention of potato chips when a customer repeatedly complained that his fried potatoes were not crisp enough and too thick. The customer’s agitation inspired Crum to improvise – basically slicing the potatoes thinly and stir-frying them. The customer loved the new crispy, browned, paper-thin potatoes and that was how potato chips were made-up. That first ever potato chips were called Saratoga chips since the historical incident happened in an elegant resort in Saratoga, New York. Now that you’re aware of its history, you surely can’t wait to try this potato chip recipe that has a healthy twist- no frying but just baking!
Ingredients
  • 2 pounds of peeled potato, thinly sliced (about 2 large russets)
  • Vegetable cooking spray
  • ½ teaspoon salt (2.5 g)
  • ⅓ cup of fine crumbled blue cheese or substitute Gorgonzola (35 g)
  • ⅓ cup fat-free sour cream (80 ml)
  • 2 tablespoons of light mayonnaise (30 ml)

  • 2 cups clarified butter (450 ml)
  • 1½ cups canola oil (360 ml)
  • 4 russet potatoes or 2 Yukon gold potatoes
  • Kosher salt
  • 2 cups semi-sweet chocolate chips (350g)
  • 2 tablespoons vegetable shortening (30 ml)
Instructions
  1. In a deep saucepan, heat clarified butter and oil to 300° F.
  2. Peel potatoes and cut them into paper thin slices.
  3. Deep -fry potatoes in batches for 4-5 minutes or until oil around chips is no longer bubbling or until they are crispy. (Moisture in potatoes causes the oil to bubble; once the bubbles stop, the chips will be crispy)
  4. Drain on paper towels and sprinkle with kosher salt.
  5. In a small mixing bowl, mix chocolate chips and shortening.
  6. Heat chocolate mixture in a microwave oven on high heat for about 1½ to 2 minutes or until melted and smooth when stirred.
  7. Dip potato chips, one at a time, into melted chocolate, coating one half to three quarters of each potato chip.
  8. Remove excess chocolate by pulling each chip at the edge of the mixing bowl.
  9. Place chips on a baking pan lined with wax paper.
  10. Allow chips to stand at room temperature for about 15 minutes, and then refrigerate to chill.
  11. Serve and enjoy!
Notes
You can use butter instead of shortening in making the chocolate dip. When making them for holidays, you can also sprinkle potato chips with colored sugar after coating them with chocolate to make them more attractive.

  • 700 g potatoes (1.54 lbs)
  • 2 ½ cups meat stock or vegetable stock (570 ml)
  • 2 tablespoons vegetable oil (30 ml)
Instructions
  1. First, preheat the oven to 375 degrees F.
  2. Slice the potatoes into thick chips.
  3. Heat the meat stock/ vegetable stock in a large pan, upon boiling, plunge the potatoes into it and cook approximately for 5 minutes or until tender.
  4. Drain the potatoes and cool. If desired, set aside some of the stock to make chips for another day.
  5. Pour the oil in a large zip lock bag and carefully toss the chips in it. You can freeze them and use them for another day.
