This recipe is very easy to make and it is great for holidays like Christmas and Thanksgiving. These are some of the best potato rolls / yeast rolls you will ever taste. This is a great meal for any occasion as the super filling rolls will satisfy the stomachs of your friends and family. Mashed potato rolls are not something people eat on a regular basis and can be a big attention grabber. One of the convenient things about this recipe is you can use your left over mashed potatoes that would otherwise get tossed out. Potato Rolls Ingredients

  • 1pk of yeast
  • 1/2 cup of warm water
  • 1 cup of left over mashed potatoes
  • 1/2 cup of sugar (some mic in cinnamon)
  • 2 eggs
  • 1ts of salt
  • 2/3 cup of oil
  • 1 cup of milk (Scalded)
  • 5-6 cups of flour

Makes 3 to 4 dozen.

Instructions

Proof yeast in warm water and a some of the sugar. (not needed if you are using a bread machine)

Mix the left over potatoes, sugar, eggs, salt, oil and milk in a pan.

Stir in enough yeast and flour to make a stiff dough. Place inside of a greased bowl and cover it.

This can actually be stored up to 4 days. Punch down and knead slightly.

Shape and let rise until doubled, then bake for only 8 minutes at 400°.

Make walnut size balls of dough. Place about 2 inches apart in a well-buttered 9 x 13 inch pan. Bake in a preheated 350 degrees F (175 degrees C) oven for 30-45 minutes or bake in 400 degrees for 8 minutes. Brush top of rolls with margarine while hot.

Extra Tips and Tricks

It is best to make the dough in a bread machine. Put all ingredients in the machine in the order suggested by the manufacturer. Process on the dough cycle. When the cycle is done, put the dough in a buttered bowl and then cover it. occasionally you will need to use extra flour to get this recipe perfect.

Leave in the refrigerator over night for the best flavor. Slow rising always gives the best flavor in yeast breads.

Some people do use sweet potatoes in this recipe as well. You can mix in mushrooms and rosemary if you like the mushroom taste. Mostly people eat potato bread for dinner and it is great for serving a large number of people.
